Chocolate Fudgy Bites

Ingredients

1 1/2 Cups ground Almond

4 Tbs Cocoa

2 Tbsp Coconut Oil

4 Tbsp Pure Maple Syrup

1 Tsp Vanilla Extract

10 grinds on Sea salt Grinder

Method

Melt coconut oil.

  • In a bowl, mix together ground almond; cocoa, coconut oil, maple syrup, vanilla and salt.

  • Once mixture is combined, roll into balls. You can roll the balls as they are or roll them in cocoa or coconut.

  • Place in a freezer bag or freezer friendly container.

  • Store in the freezer and take out as required.

NOTES

1/2 Cups walnuts

1/4 Cup sunflower seeds

1/4 Cups pumpkin seeds

1/2 Cups coconut

4 Tbs cocoa powder

4 Tbs pure maple syrup

Tsp Vanilla Extract or essence

2 Tbs olive oil

Sea salt to taste

Method

  • Add all ingredients aside from extra coconut into a food processor or thermomix.

  • Blend until you achieve a smooth consistency

  • Roll into balls and coat in coconut

  • Store in the freezer and take out as required.

Peanut Butter Slice

Ingredients

Base:
• 3/4 cup cashews
• 3/4 cup peanuts
• 4 tbsp maple syrup
• 2 tbsp olive oil
• A pinch of ground sea salt
• 4 tbsp cocoa powder


Middle:

• 1 cup peanut butter
• 3 tbsp maple syrup
• 1 scoop vanilla protein powder
• A pinch of sea salt
• 1 tbsp olive oil

Top:

• 1/4 Cup Cocoa
• 1/4 Cup melted coconut oil
• 3 Tbsp maple syrup

Method

  • Grind cashews and peanuts in a food processor or thermomix.

  • Transfer to bowl and mix remaining ingredients.

  • Flatten on a piece of baking paper and chill.

  • In a separate bowl, mix the middle layer ingredients and add to the base.

  • Top with chocolate top layer

10 large pitted dates

2 Tbsp Cocoa

zest of one orange

juice from one orange

Pinch of sea salt

1/2 tsp cinnamon

coconut for rolling

  • Grind all ingredients in a food processor or thermomix

  • Process until mix sticks together

  • Roll into balls and roll through coconut
